Ingredients: Basumati rice 1/4 kg, paneer cubes 100 grams, mushroom 250 grams, cashew nuts 10 – 15, kasoori methi 1tsp, green chillies 5 – 6, onion 2, green peas 50 grams, capsicum 2, chilli sauce 1tbsp, tomato sauce 1tbsp, soya sauce 1tbsp, pepper powder 1 tsp, ghee 3 tsp, refined oil 5 tbsps, ginger garlic paste 1 tsp, lime juice 2 tsp and salt for taste.
Method: Cook rice separately. When rice is cooking add 1 tsp ghee and 2 tbsp salt, and keep it aside (rice is not over cooked). Heat refined oil in a pan. Add cashew nuts, fry for a while. Then add chopped onion. When onions are slightly brown add ginger garlic paste, green chillies, kasoori methi, green peas, chopped capsicum and fry for 4 – 5 minutes. Then add paneer cubes, chilli sauce, tomato sauce and soy sauce. Add salt. Cook for 2 more minutes. Add cooked rice and mix well. Add lime juice. Remove from flame. Garnish with coriander leaves. Enjoy with onion cucumber raitha.
