Ingredients: 100 grams paneer cubes, 1 cup basmati rice,1 cup chopped onion, cloves 2, cinnamon 2 pieces, coconut milk 2 cups,mint leaves (pudina) half cup,green chillies 3 – 4, ginger garlic paste 1 tsp, coriander leaves for garnishing, crushed pepper powder 1/2 tsp, turmeric powder 1/2 tsp and salt for taste.
Method: In a pan add 1 tsp oil or ghee and roast paneer cubes for a while. Then add crushed pepper, salt and turmeric powder and keep aside. In a cooker add ghee. Then add cinnamon, cloves and add onions. When onions are transparent add green chillies and ginger garlic paste.saute for 2 – 3 minutes. Add finely chopped pudina leaves and coconut milk. When milk is boiling, add basmathi rice and salt. Cover the cooker and cook on medium flame.for 2 to 3 whistles.Then switch of the gas. Garnish with coriander leaves. Serve with onion raitha.
