Bitter Gourd Pickle (Karathe Nonche)

Ingredients: 2 bitter gourd (medium size),1 tsp mustard seeds, 1/2 tsp fenugreek (methi) seeds, 1 big piece jaggery,3 red chillies, 2 kumte chillies,1/2 tsp turmeric powder,1 sprig curry leaves, tamarind lump (marble size),1 small piece hing,3 tbsps coconut gratings, 2 tbsps oil salt to taste.

Method: Wash and cut bitter gourd into about 1 inch long piece .Cook in water till tender. Drain off the water. Roast mustard, methi, hing and red chillies with little oil. Add coconut gratings and roast for another 2/3 minutes. Grind all the roasted ingredients with tamarind, jaggery, turmeric powd. and salt to a fine paste. And add it to the bitter gourd. Bring to boil. Season with mustard and curry leaves in oil.
