Ingredients: Ash gourd ( kuvale) 1 big piece, 1 cup butter milk or 2 tbsps curds, 1 cup coconut gratings, 5 – 6 green chillies,1 tsp cumin seeds, 1 small onion, 1 tsp bengal gram (chana dal), 3 garlic cloves
For seasoning: 1 red chilli, 1 tsp mustard seeds, 1/2 tsp methi seeds, 1/2 tsp pepper and few curry leaves.
Method: Skin ash gourd. Cut into medium size pieces. Wash. Cook in a little water till soft. Add 1/2 tsp haldi powder. Clean chana dal and soak in water. Cut green chillies into slits and roast in little oil. Peel garlic cloves and keep aside. Grind coconut gratings with roasted green chilli slits. When half done, add cumin, onion, garlic and chana dal and grind to a fine paste. To the cooked ash gourd pieces, add salt, masala and butter milk or curd. Bring to boil. Remove from flame. Season with red chilli bits, pepper, methi, mustard and curry leaves in oil.
