Ingredients:1/2 kg gherkin (tendle), 3 tbsps oil, 10 garlic cloves, 4 red chillies and salt to taste.
Method: Wash gherkins. Cut off their both ends. Flatten a little by crushing them with a pestle in a broad wooden bowl. Apply salt and keep aside for 7 – 8 minutes. Prepare seasoning in frying pan with red chilli bits and garlic in oil. When garlic turns brown, squeeze gherkins and drop them in to pan. Turn over thoroughly. Cook under cover on medium flame. Open lid 2 – 3 times and turn over to prevent sticking to bottom. When gherkins turns brown, remove from flame.
