Vegetable Bonda

Ingredients: 2 cups boiled and mashed vegetables (beetroot, carrot, potato and green peas), 6 – 7 green chillies, 4 tsps of oil (for seasoning), 2 cups bengal gram flour, 1 tsp chilli powder, 1 tsp garam masala powder, few coriander leaves, salt to taste, 1/2 tsp mustard seeds, 1 sprig curry leaves, and oil for frying

Method: Wash vegetables, boil and mashed it. Chop green chillies and curry leaves. Drop them into mashed vegetables and add salt. Mix well. Add garam masala powder, chilli powder and chopped coriander leaves. Season with mustard and curry leaves in oil. Shape balls of the veg. mix. (big lime size balls) and keep aside. Sieve bengal gram flour. Prepare a batter by adding half cup of water, salt chilli powder and hing water to the flour. Heat oil in a frying pan. Flatten the balls of veg. mix balls, dip in the batter, take out and drop gently in hot oil, and deep fry 6-7 bondas at a time, till golden brown.Serve with chutneys or tomato ketchup.
