Ingredients: Rice 1 cup, onions 2, mixed vegetables (beans, carrot, peas, potato) 2 cups, green chillies 4 – 5, coriander leaves 1 small bunch, garlic 4 – 5, ginger half inch piece, fennel seeds 1/2 tsp, cloves 4 – 5,cinnamon stick a small one, cardamom 2, ghee 3-4 tbsps, oil 3-4 tbsps, turmeric powder 1 tsp, cashewnuts 2 tsps, khus khus 1 tsp and salt to taste.
Method: Wash the rice, drain the water and keep aside. Cut the vegetables in to small cubes. Cut onions into thin long slices. Grind all the masala items (green chillies, ginger, garlic, coriander leaves, fennel seeds, cinnamon, cloves, khus khus, cashewnuts, and few onion slices) into a smooth paste. Keep aside. Place the pressure pan. Add oil/ghee. Add small piece cinnamon, cloves 2 and cardamom 2 and fry for 2 minutes. Add onion and fry till it is transulent. Add vegetables and fry for 2 minutes. Add the masala andfry for few minutes till the raw smell goes out. Add rice and fry for some more minutes. Add 2 cups of water. Bring to boil. Then simmer theflame and close the pressure pan lid and the weight and cook for just 10 minutes. Even if the pressure does not come. Switch off the gas. Leave it for 15 minutes. Open the lid. Pulav is ready to serve.
