Ingredients: Wheat shevai 1/4 kg, mustard seeds 1 tsp, cashew nut bits 2 tbsps, curry leaves few, urad dal 1 tsp, sugar 2 tsps, coconut oil 3 tbsps, 4 split green chillies, 3 tbsps coconut gratings and salt 2 tsps
Method: Soak shevai in water for 1/2 an hour or till soft and drain it. Apply salt and sugar, keep aside. Heat oil in frying pan. Add mustard and urad dal. When it splutters, drop split green chillies, curry leaves and cashew nuts bits. Stir for 1 minute.Then add shevai.Turn over well. Cook on low flame under cover for 5 minutes. (Note: open once or twice and turn over, to prevent sticking to bottom). Remove from flame. Garnish with coconut gratings.
