Beetroot Duddali

Ingredients: 1 cup arrowroot flour,1 cup milk, 2 cups water, 1 cup sugar, 1/4 cup beetroot paste, 1 tsp cardamom powder, 2 tbsps ghee.

Method: Mix arrowroot flour with 8 -10 cups of water. Strain through a strainer and collect in another vessel. Set aside for 20 minutes. Then decant water on top. To the settled flour, add milk, sugar, 1/4 cup of boiled beetroot paste, 2 cups of water. Cook, stirring constantly, till the paste becomes transparent. Add 1 tbsps of ghee and cook on low flame. Add cardamom powder. Remove from flame. Spread the paste in a thali, smeared with ghee. When cool, cut in to pieces.
