Ingredients: 200 grms Paneer cut into 1 & 1/2 ” pieces & fried till golden, 1 tbsp Poppy seeds, 2 tbsp cashew nuts, 4 tb sp oil, 1 large onion chopped, 2 tomatoes chopped, 10- 12 curry leaves, salt to taste, 1/2 tsp turmeric powder, 1 tsp chilli pdr, 1″ piece ginger, 10 flakes garlic, 1 tbsp lemon juice….. Chettinad masala( Roasted & ground ) 1/2 cup freshly ground coconut (Only white part ) 1 tsp coriander seeds, 1″ cinnamon, 1/2 tsp cumin seeds, 1 tsp fennel seeds, 3 dry red chillies, seeds of 3 green cardamoms, 2-3 cloves
Method:1. soak cashew & poppy seeds in warm water for 15 min, 2. Heat 1 tbsp oil in a kadai , add all ingredients of the chettinad masala & fry till fragrant & golden…. 3. Drain the cashews & poppy seeds …& grind with fried masalas & Ginger , Garlic to a smooth paste with enough water…. 4. Heat oil in a kadai, Add chopped onioon, fry till golden… 5. aadd ground paste & curry leaves…Saute for a while… 6.add chopped tomatoes ,salt, haldi & chilli pdr….cook till tomatoes are well blended 7. add lemon juice & 1 & 1/2 cups water…bring to a boil….add fried paneer & boil again….garnish with chopped coriander leaves & Freshly ground pepper..
