Coconut Rice

Ingredients: Basumathi rice 1 cup, coconut grated 1/4 cup, mustard seeds 1/2 tsp, chanadal ( bengal gram) 1 tsp, urad dal (black gram) 1 tsp, cashew nuts bits 2 tsps, jeera (cumin seeds) 1/2 tsp, onion chopped 1, dried red chillies 2, curry leaves few, coriander leaves chopped 2 tsps, oil 3 tsps and salt to taste.

Method: Half cook the rice with salt and drain excess water. Heat oil in a pan. Add mustard seeds and dried red chillies. When it crackles add jeera, chanadal, urad dal, cashew nuts bits and fry till the colour turns to golden brown. Add onions and curry leaves, saute for a while till transparent. Now add coconut and mix well. Immediately add rice and mix well. Add salt if required. Sprinkle coriander leaves and mix well. Switch of the stove.
