Ingredients: Skin of 2 small ridge gourd chopped 1 cup, coconut gratings 1 cup, roasted red chillies 4, green chillies 2, tamarind lump (bengal gram size), hing powder 1/2 tsp, cumin seeds 1/2 tsp, mustard seeds 1/2 tsp,oil 5 tsps, and salt to taste.
Method: Wash and chop finely skin of ridge gourds. Remove fiber from the skin. Heat oil in frying pan. Prepare seasoning with cumin, hing and mustard seeds. Put ridge gourd skin in to seasoning, add half cup of water, stir it, cover the pan and cook. When the skin is cooked add slit green chillies and coconut gratings. Mix and fry till brown. Remove from the flame. Grind the ingredients with roasted red chillies and tamarind. Add little water while grinding. This is dry chutney. Add salt before removing.
