Cauliflower Parata

Ingredients: For the mixing Blend, 1/2 cup cauliflower grated, 2 finely chopped onion1 tbsp finely chopped ginger, 1 tbsp finely chopped garlic,1 tbsp finely chopped coriander leaves, 4 finely chopped green chillies, 1/2 tsp chilli powder, salt to taste, for roasting: oil or ghee.

Method: Prepare a soft dough by mixing together half cup of water, 1 tsp salt and wheat flour, and keep aside for half an hour. Then shape the portions of the dough in to big lemon size balls. Roll them in to chapathis. Wash and grate cauliflower. Prepare a blend by mixing together all items listed above. Divide the mix in to portions as many as chapathis. Place the mix in the centre of the chapathis and cover the mix fully by bringing up the chapathi borders. Dust this ball with wheat flour and roll into paratha. Roast both sides of paratha in ghee. Served with coriander chutney and curd.
