Ingredients: Palak (spinach) 2 bunches, Paneer (cottage cheese) 200 grams, green chillies 3, garlic 8 cloves, oil 3 tbsps, cumin seeds 1 tsp, lemon juice 1 tbsp, fresh cream 4 tbsps, salt.
Method: Wash spinach thoroughly in running water. Blanch in salted boiling water for 2 minutes. Cool. Chop green chillies. Grind spinach in to a fine paste along with green chillies. Dice paneer in to 1 inch pieces. Chop garlic. Heat oil in a pan, add cumin seeds. When they begin to change colours, add chopped garlic and saute for half a minute.Add spinach puree and stir. Add water if required. When the gravy comes to boil, add paneer and mix well. Stir in lemon juice. Finally add fresh cream.
