Masala Dosa

Ingredients: 1 cup black gram dal, rice 3 cup, tur dal 2 tbsps, fenugreek (methi) seeds 2 tsps, sugar 2 tsps, butter half cup and salt to taste.

Method: soak all the dals and rice together in water for 3 to 4 hours. Then wash and grind to a fine paste. Add salt. Transfer to a vessel and keep aside, under cover over night. Next day , while preparing dosas, have the potato bhaji ready. Spread batter thinly on hot dosa pan smeared with butter or ghee & roast one side of dosa for a while, under cover. Then open lid, put a small quantity of bhaji on one half of the dosa, & in other side 1 tsp red chutney spread. And fold the dosa. Roast for few minutes. Then serve with chutney.

Red chutney: 3 tbsps coconut gratings, half onion, 3 to 4 garlic cloves, 1 tsp coriander seeds, 3 to 4 kumte chillies, 1 tsp tamarind pulp & salt to taste. All the above ingredients put in to mixie & grind to a smooth paste.

Coconut Chutney: half cup coconut gratings, 3 green chillies,tamarind pulp 1 tsp, mustard seeds 1 tsp, few curry leaves, 2 tsps oil & salt to taste. Grind coconut gratings with chillies, tamarind & salt to a fine paste. Add desired quantity of water. Season with mustard & curry leaves in oil.
