Ingredient: Brinjal 2 medium sized, yogurt 1 cup, ginger garlic paste 2 tsps, coriander powder 2 tsps, garam masala powder 1 tsp, red chilly powder1 tsp, cumin powder 1/2 tsp, turmeric powder 1 tsp, onions 2 medium sized, green chillies 4, red chillies whole 3, gram flour 1/2 cup, oil 4 tbsps, cumin seeds 1 tsp, hing 1/4 tsp, coriander leaves for garnishing & salt to taste.
Method: Wash brinjal & cut in to cubes. Add ginger garlic paste, coriander powder, garam masala powder, red chilly powder, cumin powder, turmeric powder & salt to brinjal pieces & mix well. Keep aside to marinate for 10 minutes. Beat together yogurt & gram flour. Mix in 4 cups of water. Keep aside. Heat oil in a pan. Add onions, green chillies & saute for 3 to 4 minutes. Add marinated brinjal & cook for 10 minutes. Stir in yogurt mixture & cook for another 5 minutes. Heat oil in a pan, add cumin seeds, whole red chillies & hing (asafoetida). Add this thadka to cooked brinjals & stir. Garnish with coriander leaves.
