Ingredients: Palak 2 medium bunches, ginger i small piece, garlic 5 cloves, onion 1 medium size ,butter 2 tbsps, cloves 2, cinnamon 1 inch piece, maida 2tbsps, peppercorns 4 – 5, salt to taste, white pepper powder half teaspoon, cumin powder 1 tsp.
Method: Clean & wash spinach leaves. Blanch the leaves in to boiling water for 2 to 3 minutes. Drain in cold water and puree them in a mixer. Peel wash & finely chop ginger garlic & onion. Heat butter in a pan.Add cardamoms, cloves & cinnamon, refined flour & saute for 2 to 3 minutes. Add ginger garlic onion & continue to saute for about 5 minutes. Add peppercorns, salt, pepper powder, cumin powder& 5 cups of water. Stir & simmer for 10 minutes. Strain the stock. Add spinach puree to the stock& mix well. Cook for 4 to 5 minutes. Serve hot.
